This Manzanilla oil was made from fruit harvested in October, when the fruit was still quite green. Manzanilla is grown primarily as a table olive, but it also makes a fantastic spicy oil. This one was very well made. It has a wonderful fruity, floral aroma, strong pungency and just the right amount of bitterness. It is dominated by herbal, green-fruit flavors of fresh cut grass, green apple, green banana, cinnamon and black pepper. It is zingy and very fresh.
